Key takeaways

  • resOS’s 2026 index of 3.77 million reservations at 2,417 restaurants found an average recorded no-show rate of 2.33%, from 0.49% in Switzerland to 5.88% in France.
  • Bookings with no-show protection had a 0.80% recorded no-show rate versus 2.47% without, and SMS reminders were linked to 16% fewer no-shows.
  • OpenTable reports a 60% reduction in no-shows for restaurants using its deposits, and 44% of UK diners say a small deposit makes them likelier to show or cancel properly.
  • Use deposits for high-value bookings, remind every guest, and make cancelling easy so the table can be resold.

Restaurant no-shows are an argument that never seems to end. Some owners insist deposits drive guests away. Others say they cannot survive without them. In 2026 we have better data than ever, and it gives a more nuanced answer than either side.

The biggest no-show dataset available

In August 2026, the reservation platform resOS published its Restaurant No-Show Index, based on 3,768,761 reservations at 2,417 restaurants between August 2025 and July 2026.[1]

Germany1.30%
Australia1.41%
United Kingdom1.48%
Spain2.18%
United States3.17%
Italy4.71%
France5.88%

Two cautions from the authors: these are recorded no-shows (staff have to mark them), and the sample leans heavily towards the UK, which contributes 54% of reservations. The UAE is not broken out. Still, it is the clearest public picture we have.

Deposits and protection

In the same dataset:[1]

  • Bookings with no-show protection (deposit or card guarantee) had a recorded no-show rate of 0.80%.
  • Bookings without a payment requirement had 2.47%.

That is roughly a threefold difference. But resOS is explicit that this cannot be fully attributed to the feature: restaurants that take deposits tend to be different restaurants. A matched analysis produced results too uncertain to publish a precise effect.

OpenTable’s Restaurant Impact Report is more direct. It says restaurants using deposits through its reservation system globally saw a 60% reduction in no-shows, and that 44% of UK diners said a small deposit or card hold would make them more likely to honour or properly cancel a booking.[2]

Reminders

resOS also looked at SMS reminders. Reservations with a delivered reminder had a 16% lower recorded no-show rate than comparable reservations without one, across 46,884 reminded bookings at 257 restaurants.[1] Again an observed association, not a controlled experiment, but consistent with what healthcare research has shown about reminders for years.

Interestingly, simple confirmation prompts showed almost no effect. A reminder that arrives at the right time seems to matter more than asking guests to click "confirm".

What this means for Dubai restaurants

Dubai’s dining culture has its own patterns: late dinners, large groups, weekend brunches, Ramadan iftar and suhoor bookings, and many guests booking by phone or WhatsApp rather than an app. A sensible policy:

  1. Protect high-value bookings. Deposits or card guarantees for large parties, peak nights, tasting menus and special events.
  2. Remind every guest. A message the day before and on the day, with an easy way to cancel or change.
  3. Make cancelling effortless. A guest who can cancel by replying "cancel" frees the table for someone else. A guest who has to call during service often just does not show.
  4. Keep a waiting list and offer freed tables immediately.
  5. Track your own rate by day, party size and channel.

Where AI fits

Most of this is phone and messaging work that falls during service, exactly when the team cannot do it. An AI host can:

  • Take the booking by phone or WhatsApp and send a deposit link during the call
  • Send reminders and process cancellations or changes in your reservation system
  • Offer freed tables to the waiting list straight away
  • Answer guests’ questions so small doubts do not become no-shows

Take deposits, send reminders and fill cancellations automatically.

The balanced view

Deposits are not a cure-all and not a guest repellent. Used selectively, with clear communication, reminders and an easy way to cancel, they protect your best tables without punishing your best guests.
